The wine
Acidity does the work here. Bright citrus and pear sit on a crisp line; the wine stays fresh instead of soft-sweet, which is half the battle in dealcoholized Sauvignon Blanc. The mid-palate is a little lean — alcohol texture is not fully replaced — but the acid keeps the glass upright rather than hollow.
Gooseberry and lime open the nose, with tropical fruit lifting rather than thickening the aroma. It smells like the variety, not like a flavored cooler. Sip cold: citrus leads, pear softens the edges, sweetness stays restrained. The finish is clean and hangs on lime — lingering enough to matter, not long enough to pretend toward a cellar white.
Serve it well chilled in a white-wine glass. Warm, the lean middle shows more; cold, the gooseberry–lime shape holds. It is recognizably Sauvignon Blanc. Intensity of a high-acid Stellenbosch classic is muted, but the cues are right, and the sugar never takes the glass.
