The wine

The tension here is acid against a little must-sweetness. Ripe mirabelle and a hint of quince open the aroma, then a salty slate edge cuts through; in the sip that same salt-and-citrus line meets a light, precise sweetness that reads as concentrate rather than ripe fruit sugar. Acidity still announces Riesling. The sweetness never quite wins, but it is audible in the middle of the glass, softening the edges just enough to register as off-dry.

Keep it cold and the balance holds — short citrus and salt at the close, clean enough to reset for another pour. Let it soften and the must-sweet note steps forward, softening the slate and making the light body feel softer than the aroma suggested. Off-dry, bright, and short: a Riesling shape that lives in the push between fruit sugar and acid, not in weight or length.
