    Juicy and relatively broad for an NA white. Pineapple and passion fruit dominate, followed by lychee and citrus acidity. Some sweetness, but enough tension to keep the palate moving.

    Medium, tropical and lightly tart, with pineapple and citrus lingering.

The wine

Current Cypher Blanc is organic Roussanne and Colombard from the Gard, traditionally vinified, then dealcoholized. Label: alcohol-removed white, 0%, 750 ml. Ingredients begin with dealcoholized wine and include rectified concentrated grape must and CO₂.

Nose is exuberant — pineapple, passion fruit, lychee, lighter citrus and white florals. Palate is juicy and relatively broad; pineapple and passion fruit lead, lychee and citrus acid follow. Sweetness shows, but tension keeps it from cloying. Finish is medium, tropical and lightly tart.

Score 85: Tropical · Juicy · Soft · Fresh. Exact still technology stays undeclared on the producer page; dealcoholization itself is solid.

Sources disagree on the following points.

  • Method: Earlier press describes vacuum evaporation below ~40°C. Current producer page confirms dealcoholization after traditional vinification without naming equipment. Technique undeclared.
  • Sugar: Dis&Dis “23mg/L residual sugar” unit is almost certainly wrong. Omit sugar until a technical sheet confirms g/L.
