In the glass

  1. Appearance

Pale straw to light golden yellow, crystal clear, with a lively, light bead.

  2. Nose

Expressive florals lead, with an inviting sweet impression. The nose is open and immediately floral; the sweetness reads as perfume, not syrup.

  3. Palate

Off-dry and floral, with a rounded mouthfeel and lively carbonation. A grapefruit-like citrus tang cuts the gentle sweetness and keeps the sip from going soft. Bright, mouthwatering acidity lands on the gums and the sides of the mouth; it balances the sugar without flattening the rounded texture.

  4. Finish

Persistent and mouthwatering. Flavor hangs on, and the same grapefruit-like tang continues after the sip.

How wine-like is it?

High wine likeness

Convincing sparkling-wine character: floral perfume, rounded texture, lively bead, sweetness in check, and a sustained finish.

The wine

The citrus is what keeps the sugar honest. This is off-dry sparkling Macabeo — floral on the first sniff, rounded in the mouth — and the sip would coast if a grapefruit-like tang did not cut across it. The bite is bright enough to wake the gums and the sides of the mouth. It is not so sharp that the rounded middle collapses.

The glass is crystal clear, pale straw to light golden yellow, with a lively, light bead. The first impression is floral and openly sweet. That sweetness shows on the palate as off-dry flower and fruit, with a rounded mouthfeel and energetic bubbles. The grapefruit line is the counterweight, not a decoration. It keeps the gentle sugar from turning soft.

Acidity does the structural work. It is mouthwatering and citrus-led, and it balances the wine without stripping texture. Body feels satisfying rather than thin; fizz and acid supply the lift. The close stays. Flavor hangs on, and that same tang keeps going after the sip.

It drinks as sparkling wine: perfume, mousse, sweetness in check, a finish that lasts. Texture, bubble, and citrus freshness lock together. That is why the glass works.

How to drink it

Well chilled, in a sparkling-wine glass.

Who it’s for

A toast or an aperitif when you want floral fizz with a citrus snap.

Research notes

Producer SKU card: 0.0% ALC. VOL., 100% Macabeo, De-alcoholized, alcohol-free sparkling made using spin column distillation, fruity character. The house section names spinning cone column distillation. The blue bottle label prints Alcohol Free Sparkling and Alc. 0.0% Vol. US club pages (WSJ Wine, Omaha Steaks Wine) name Joan Soler, say the wine starts as alcoholic 100% Macabeo, then has the alcohol extracted; they print a 0.5% residual and Penedès DO. WinePlanet prints a reconstitution list and nutrition, and files the wine under Cava DO. Producer and retailer tasting copy stays off the editorial tasting fields.
