Zero Sauvignon Blanc
83/100
The short takeGrapefruit and pomelo lead an expressive nose, with passion fruit adding a tropical accent. Bright acidity gives the palate energy, carrying the fruit toward a subtly saline finish. The wine
Zero by Les Fumées Blanches Sauvignon Blanc is a still French dealcoholized wine made from 100% Sauvignon Blanc. SAQ’s exact-UPC listing gives 0.1% alcohol by volume, while the photographed U.S. bottle conservatively declares less than 0.5%.
The brand technical sheet describes clay-limestone soils and 25-year-old vines. Grapes are mechanically harvested between 4 and 9 a.m., macerated on skins for 8–12 hours, pressed and racked. The juice is cold-stabilized at 8–10°C, reunited with filtered fine lees, fermented at 16–18°C and aged on fine lees before alcohol removal.
The named removal method is vacuum dealcoholization at 35°C, continued to the producer’s 0% process target. The producer then adds natural citrus and exotic-fruit aromas. That target is not treated as the package’s measured ABV; Dry Standard uses SAQ’s exact-UPC 0.1% figure and retains the U.S. label’s under-0.5% declaration as corroborating evidence.
The photographed bottle lists dealcoholized French white wine, rectified concentrated grape must, malic acid, carbon dioxide, tartaric acid, natural flavours, sulphites, potassium sorbate and preservative E242. Per 100 ml it declares 16 calories, 4 g carbohydrate, 3.7 g sugars, under 0.1 g protein, and no fat or salt. The same label supplies the identifier recorded in frontmatter and directs refrigeration after opening and consumption within three days.
Grapefruit and pomelo lead an expressive nose, with passion fruit adding a tropical accent and a subtle herbal edge behind the fruit. The palate stays citrus-led and lively: tropical-fruit accents ride on bright acidity, and a fluid texture keeps it refreshing rather than weighted. The finish lingers on citrus with a delicate saline edge.
That saline close is what the producer copy also promises, and the pour delivers it without turning lean or sharp. The appeal is aromatic freshness and clear varietal character in a light, fluid frame.
