Research notes

The producer’s technical sheet identifies French Cinsault wine and a partnership with Josef Drathen Winery in the Mosel. After cool fermentation to dryness, the finished wine was transported from France to Switzerland in temperature-controlled tankers for vacuum rectification at 77°F. A resin-plate method separates alcohol from aromatics; the aromatics are blended back. The sheet records bottling on July 9, 2026. The French appellation describes the wine origin, not the alcohol-removal location.
