How wine-like is it?

The Muscadet signature is intact: green apple, citrus, and a saline iodine edge. Lean and dry, with a mineral finish that holds longer than most dealcoholized whites. What is missing is mid-palate weight, not the shape of the wine.
The wine
The nose is Muscadet before it is a general white: orchard fruit, then salt, and no tropical perfume. That iodine is the signature, and it is unmistakable.
The palate is lean and precise. It is dry and structured rather than sweet. Acidity does the work alcohol would have done, and it does it without turning the wine sour. Body stays light. There is no oily mid-palate and no vanilla. The salt is the texture as much as the flavor.
Long and mineral afterward. The saltiness carries past the point where most dealcoholized whites give up, which is the reason to open this one. Serve it well chilled. Give it a minute and the apple opens and the iodine stays, which is still the right shape.
This is a food white. Lean, saline, and dry. The grape character survived. The flesh of a fuller Melon is not here. The salt is, and that is the interesting part. Well chilled, the iodine stays precise. That is how to drink it. The salt is the finish worth having. Apple, then salt, in that order.
