In the glass

Appearance
Pale straw to pale gold. The bead is lively, and the wine looks bright.
Nose
Distinctly vinous. Subtle orchard fruit leans toward pear and apple, and the wine character arrives before the fruit does.
Palate
Slightly sweet, held by moderate acidity and a lively bead. The bubbles are integrated rather than aggressive, and they give the wine enough lift, structure, and freshness that the sweetness stays in check.
Finish
Pear and apple linger after the sip. Acidity and the bead carry that fruit into a persistent, refreshing close, so the sweetness does not sit once the wine has gone.

How wine-like is it?

Separate from the score. A convincing resemblance is not a higher rating.

Convincingly wine-like. A vinous aroma, a bead worked into the wine, and fruit that lasts make it read as sparkling wine.

The wine

Edenvale Sparkling Cuvee smells like wine before it tastes like one. Pale straw to pale gold, it looks bright, and the bead is already lively in the glass. The aroma is distinctly vinous, with subtle orchard fruit leaning toward pear and apple. The wine character comes first, and the fruit sits inside it.

Slight sweetness shows first, and it does not run. The bubbles are worked into the wine rather than forced on top of it, so they give lift and shape without turning harsh. Fruit stays through the sip and after it. The close holds for as long as the fruit does, still refreshing at the end.

The body is light to medium. Sweetness supplies the roundness, acidity the freshness, and the bead the energy. That proportion is what makes the wine convincing. The vinous aroma, the fruit that lasts, and bubbles that never turn harsh belong to one wine. It tastes like sparkling wine. The alcohol that is gone does not leave a hole in the wine. It is plainly one to pour again.

86 sits above the median of the 22 dealcoholized Sparkling bottles we've tasted.

GoLo heat-pump. Edenvale says the unit separates the wine into alcohol, dealcoholized liquid, and essence, then returns the essence.

Research notes

It places that unit in a Murray-Darling facility built with BevZero and Logichem, and says the step avoids multiple distillation passes.
