The wine
The rosé
N.0 ROSÆ starts as Airén. The April 2025 launch says the juice is fermented, then vacuum-distilled until the alcohol reads 0.0%, and only then infused with natural rose petals. The petals are a second ingredient, not must put back for body, so the bottle is a hybrid: a dealcoholized sparkling with roses in it.
The same launch gives 25 calories in a 148 ml pour and a $28 suggested retail. The producer site now prints 0% alcohol, made in Spain, and 17 calories per 100 ml, which is that same energy in a smaller measure. Winebow is the importer named at launch. The flavor line there is floral, with melon and sweet lemon. That line is the launch, not a glass.
The launch walks the making in order. Choose the Airén. Press it. Ferment it cold. Take the alcohol off under vacuum. Infuse rose petals. Bottle it with a fine bead. That order is the whole production story on the release. The brand sits with the Catena family, and the project was built for Elena Maza, but this cuvée is the Spanish rosé, not the Argentine Chardonnay bottles sold beside it. Those are a different construction. Winebow is the importer named for the US launch. The front label reads 750 ml. The flavor sentence is the launch’s, floral with melon and sweet lemon, and it is not a tasting. This page stops short of a score.

Research notes
The front label reads N.0 (ROSÆ), dealcoholized sparkling rosé, 0% alc./vol., alcohol free, product of Spain, and 750 ml. It also prints a fluid-ounce line, 25.4 fl oz. It does not mention rose petals. Domaine EdeM is the Catena family’s no- and low-alcohol range, named for Elena Maza. This record is only N.0 ROSÆ. The 14 April 2025 launch, carried as a press release, says it is a sparkling wine dealcoholized to 0.0% alcohol by vacuum cold distillation, made from Airén grapes in Spain. The steps given there are selection, low-temperature fermentation, vacuum distillation, infusion of natural rose petals, and bottling with fine bubbles. A 148 ml serving is given as 25 calories. Suggested retail was $28. Winebow is named as the importer. The producer site, opened 2026-10-25, marks ROSAE non-alc at 0% alcohol, made in Spain, and 17 calories per 100 ml. Twenty-five calories in 148 ml is about 17 in 100 ml. The launch flavor line is floral, with hints of melon and sweet lemon. That is launch copy, not a cellar note. Blonde and Brunette in the same range are botanical Chardonnay sparklings. Uco Mineral and Uco Stones are low-alcohol and are outside this record. The launch text does not print a bottle size. The front label does.
