Research notes
May 2026 English sheet (Sparkling Zero Blanc de Blancs): harvested early September at night; direct press; vinification at 15°C; three months on lees; dealcoholised by vacuum evaporation; bubbles added just before bottling; 0.0% vol.; ageing potential 2 years. A pairing sheet (InDesign, February 2023 / April 2026) repeats that process and prints food pairing: aperitif with taramasalata, tzatziki, and lumpfish roe canapés; also fruit-based desserts. Estate Terra Vitis certified since 2000 (annual by vintage; August 2024 deck). Added carbonation after removal stays dealcoholized. Producer tasting copy stays here: exotic fruit on the nose; fragrant, refreshing palate; fine bubbles.
