Research notes
The sheet says the wine is fermented, rested briefly in stainless steel, then dealcoholized by reverse osmosis through semi-permeable membranes under controlled pressure. Sparkle is controlled carbonation with high-purity carbon dioxide at low temperature, and the sheet says no sugar is added at that step. The site describes gentle pressing, must clarification, fermentation at 14–16°C, and cold dealcoholization with membrane technology. The sheet traces the house to the heritage of Cantine Fumanelli, on the Squarano Estate near Verona.
