How to buy a nonalcoholic spirit
Dealcoholized whiskey is not a botanical tea. Ask what was in the still before the alcohol left — and whether anything was in a still at all.
The spirits shelf is where the production-type distinction does the most work. A 0.0 whiskey can be a high-proof distillate with the ethanol taken off. It can also be oak, botanicals, and flavor extracts that never fermented. Both can be worth drinking. They are not the same product.
Start with the process, not the glassware
If the producer published a removal step — reverse distillation, vacuum columns, thermal extraction from a high-proof spirit — treat it as dealcoholized and judge the glass. If the copy is “crafted to mimic” with no base spirit, it is an alternative. Ritual’s tequila is the second kind. Spiritless Kentucky 74 is the first.
Do not upgrade marketing language. “Spirit” on a label is not a method.
Expect oak and sweetness to do extra work
Ethanol carries aroma. After it is gone, producers lean on wood, vanilla, and residual sugar. That is not a moral failure. It is physics. Taste for heat that is not ethanol — pepper, tannin, bitterness — and for a finish that does not collapse into syrup.
Buy a bottle you will mix, then one you might not
Most NA spirits earn their keep in a highball. A dealcoholized tequila that survives soda water is more useful than a neat-sipping whiskey that tastes like furniture polish. Once you have a mixer that works, try the same bottle neat. If it dies, keep mixing.
