Verdict Jörg Geiger's Blanc de Blanc is organic Chardonnay and Colombard, bottle-fermented and aged two years on the lees before vacuum distillation: brioche, apple,… A Swedish brand's French-made sparkling Blanc de Blancs, aged 12 months in oak before the alcohol is vacuum-distilled out. Reads closer to Champagne-style th… Dealcoholized Spanish sparkling cava under 0.5% ABV. Green apple and citrus, fine bubbles, bright acid. Solid everyday value. French alcohol-removed blanc de blancs from Villa à la Mer. The process is published. The glass is a gentle bead and very little flavor.

Likeness Lees-aged blanc de blancs, not fruit soda. Brioche and baked apple over a fine mousse, with a toasty finish that outlasts the fruit. The extra mid-palate weight is what makes it read as wine. The oak is in the aroma before the fruit: honeyed, a little toasty, green apple and Meyer lemon under it. Velvety bubbles and a fuller body carry ripe pear, mango, and citrus. Toast and honey come back on a creamy close. Reads as a simple cava more than as sparkling apple juice. The bead is the argument. It is built as removed wine. It does not taste like blanc de blancs, or like much wine at all.
