Likeness Lees-aged blanc de blancs, not fruit soda. Brioche and baked apple over a fine mousse, with a toasty finish that outlasts the fruit. The extra mid-palate weight is what makes it read as wine. The oak is in the aroma before the fruit: honeyed, a little toasty, green apple and Meyer lemon under it. Velvety bubbles and a fuller body carry ripe pear, mango, and citrus. Toast and honey come back on a creamy close.
