What is a built wine?
Why tea-based, botanical and “proxy” wines are not the same thing as dealcoholized wine.
The label “non-alcoholic wine” is doing too much work. Some of those bottles started as wine and had the alcohol taken out. Some never were wine. They were constructed to occupy the wine occasion — dinner, a stem, a toast — from tea, fruit, verjus, botanicals, fermented flowers, acids, tannins, or extracts.
We call that second object a built wine. It is a subtype of Alternative, not a sixth production type and not a dealcoholization method.

Production type still answers one question: how did this beverage become non-alcoholic?
Construction answers another: what kind of alternative is it?
Those are different dimensions. A drink that blends dealcoholized wine with tea or juice is a Hybrid, not a built wine. A botanical “whiskey alternative” is Alternative, and if we classify it further the construction is a spirit alternative — not a built wine.
Built wine, defined
Built wine: a non-alcoholic beverage constructed to occupy the sensory or dining role of wine without beginning as conventional finished alcoholic wine.
It may use tea, verjus, fruit, botanicals, fermented ingredients, acids, tannins, extracts, or other components. Tea is one possible base. It is not the category.
Trade language now also says “proxy wine” and “floral + tea-based wine.” Those phrases are commercially useful and taxonomically sloppy. One retail collection can put a tea sparkling, a fermented-flower bottle, a botanical aperitif, and a fruit-built white under a single floral heading. The dining occasion is shared. The factory floors are not.
How we print it
When we have a sourced construction, the record reads:
Alternative · Built wine
and, when we know them, the Base families: fruit · tea · botanicals.
We do not invent those fields. If the producer has not said enough to place the drink, construction stays blank and the public badge stays Alternative or Unclassified.
What this is not
It is not Red / White / Rosé. Color is still color.
It is not a catch-all called tea-based. Norie-style fermented flowers and a verjus-built white are not the same drink as a sparkling tea.
It is not automatically “better” or “worse” than dealcoholized wine. It is a different object. Taste it as such.
